Tostones or Chatinos

Tostones are prepared easily. You peel and slice the green plantain in big pieces (1 – 2 inches) and deep fried it until they change colour to golden. Then you take them out of the hot oil, smash each piece to make them flat, like a super size banana chip and continue frying the pieces until they are crispy.  Do not forget to add salt to reach the “perfect” taste. 🙂

I am continuing my Cuban food overdose as long as my mom is in Toronto. Today we prepare tostones as a side dish and I ate about 60% of the total amount. I will not be able to eat my mom’s plates for a year so, therefore, I better stock some flavours and smells up in the brain. The next plantain dish will be “platano maduro frito” which is the same plantain cooked (fried) when the plantain is riped. Pure sweetness.

I understand that what I have right now through food can be defined as a medium home sickness.

Anyone who has ever left home for a while or for good could understand how the smallest things can awake crazy memories, anything can become more precious and unique and even make you show some tears. To me, cooking, listening to music, talking and going around with my mom is the closest road to get to Cuba.
